S'mores Bars

You're going to love this recipe. It is incredibly yummy, rich and easy to whip up. I cut my pieces small because it is so rich. Besides I find that people, especially ladies, are more apt to have a piece when it's "only a small bite". Of course with these silly bars they are so addicting it's hard not to go back for another and another.




Recipe

In a large bowl cream together butter & sugar until light.
1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar

Beat in egg and vanilla. 
1 large egg
1 tsp vanilla extract

In a small bowl whisk dry ingredients together. 
1 1/3 cups all purpose flour
1 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt 
Add to butter mixture until well incorporated.

The graham crackers give the dough a more crumbly texture than typical doughs.


Divide dough in half and press into a greased 8x8 square pan. Layer the chocolate bars on top of the dough. I used 4 Hershey milk chocolate bars.
(I think next time I will break the bars into smaller pieces to help it melt more.)


Spread a jar of marshmallow fluff (8 oz) on top of the chocolate. Then layer the remaining dough on top. TIP: Mash the dough into small flat discs and place on top of marshmallow until the entire top is covered. Don't attempt to "spread" the dough over the marshmallow... 

Bake at 350 degrees for 30-35 minutes. Let cool completely in pan before cutting into squares.
